I've been reading some of the discussion (here and here) about using CCK for audio.
Because I'm putting together a new site in D6 and want it to use as few modules as possible (to make upgrading easier)--but also want it to be as "future-proof" as possible, can someone please write up a short overview of how to use CCK for embedding audio in posts for podcasting?

No good answer right now
Unfortunately, there's no good answer for this right now. As a matter of fact, I'm looking to develop a module that would be a views plugin to do exactly this. If my current proposal for the project gets the go-ahead, you should see a module to do this released at the end of the summer.
As of now, Audio module is the only sure bet (not sure how functional it is for 6 yet) unless you use something like views podcast.module which powers the Mustardseed video podcast currently...but isn't D6 compatible :(

Contemplate has some interesting new RSS features
I was just looking through the release notes for contemplate and while it looks like the 6.x version is not ready for primetime, they added some nifty RSS features to the 5.x-2.0 version. Haven't played with this yet, but it might be another option.
