So I just started recording phone interviews recently and I found a VERY simple and so far, foolproof way.
The iPhone's 1/8" headphone jack actually works as headphones for a phone call. I simply convert that jack to a 1/4" and plug it into a line input on my DAW (using Pro Tools). Then I have the call pumping into the recording system, which I monitor in headphones.
For them to hear me, I just make sure the phone is somewhere in the vacinity of my microphone and it's worked well so far. Simple, cheap, and straightforward. The only issue I forsee will be getting a bad cell signal someday.

The second option is to use Skype and something like CallRecorder. I've used this also and it works well,spitting out a high quality file.

This is similar to the iphone option. With most phones, whether they are cell or land lines, you can setup a headset. In this case you can hook that jack up to a computer or protools. With that you can record a phone interview.

Actually, I tried that, but most regular phones have a non-standard jack that will not work with a 1/8" miniplug. At least that's my experience, since I tried this a couple years ago and spent a lot of time looking. My current Nokia also has this proprietary size.

We're looking to do more interviews over at the Christian Web Trends Blog. Not sure if we'll podcast the audio or not, but at the very least we'd like to record phone interviews so that we can make sure we get the quotes write when we write it up.
